Try these easy and nutritious Chai Pancakes for Ramadan!

Ingredients:

  • 2 eggs

  • 1 banana

  • Cinnamon

  • 2 Chai Spoons (or more to taste)

  • Greek Yogurt or full fat cottage cheese

  • Fruit for topping

  • Toppings such as Chia seeds, nuts, Goji berries etc.

  • A little bit of butter or oil for frying

Preparation:

  1. Mash the eggs and bananas in a small bowl.

  2. Heat a little butter or oil in a frying pan over medium heat.

  3. Scoop the mixture into the pan to make small pancakes. Fry them on both sides until golden brown and turn them over when the top starts to set.

  4. Repeat this until all the batter is used.

Topping tip:

  1. Stir a warmed Chai Spoon (hold under the hot tap) into a bowl of Greek yoghurt.

  2. Top the pancakes with the yogurt, fruit and other toppings you can find in your kitchen cupboard.

* This recipe is for 1 person. For 2 people you make the pancakes with 2 bananas and 4 eggs, for 3 people you use 3 bananas and 6 eggs etc.
