Fluffy Matcha Cake 🍵

Recipe: Matcha Cake
Whether you're a fan of matcha or looking for something new and surprising, this fluffy cake is sure to impress. Ideal for a pleasant afternoon tea or as an elegant ending to a dinner. 🍰
*This recipe is for a 1-layer 15 cm (6 inch) cake*
Ingredients:
- 170g soft unsalted butter
- 1 cup white sugar
- 1/4 teaspoon salt
- 3 eggs
- 2 teaspoons vanilla extract
- 2 tablespoons whipped cream
- 2 Matcha Spoons (more can be added if desired!)
- 1 cup flour
- 1/2 teaspoon baking powder
For decoration:
Option 1 = 1/2 teaspoon matcha powder + 1/8 cup powdered sugar
Option 2 = Honey Whipped Cream (3/4 cup whipped cream + 2 tablespoons honey)
Preparation:
- Preheat the oven to 180 degrees Celsius.
- Place the butter in a food mixer, add sugar and salt. Beat on high speed for 5 minutes. 🧈
- Scrape the sides of the bowl and add the eggs. Beat again on high speed for 5 minutes.
- Scrape the sides of the bowl, then add the whipped cream and vanilla extract. Mix until partially incorporated.
- Add the matcha, flour and baking powder. Mix well until the mixture is well mixed.
- Pour the batter into a greased and floured 15cm (6in) cake tin.
- Bake for 25-30 minutes (or longer depending on the oven). The top should be springy and risen, and a skewer should come out clean.
- Remove from the oven and let cool for 10 minutes. Then invert the cake onto a rack and let it cool completely.
- Decorate with either the matcha-powdered sugar mix, fruit or honey-whipped cream.
